Breakfast burrito casserole!


Hi Reader,

I posted a couple of breakfast burrito recipes this week. I first started out with these Breakfast Burrito Bowls which are easily customizable, filling, and so delicious. Then I got to thinking - this would be fantastic as a casserole too! So I set out to make and photograph it in casserole form as well, and let me tell you, it's perfect for meal prep, busy weeks, weekend brunches, and serving a group.
